Steve Ryan shot this great work for the Telegraph. Steve travelled to the northern Wales to a beautiful peninsula to the Ynysgain Fawr on Llyn. Steve captured the serene setting perfectly. This amazing cheddar cheese is kept down a 500ft slate mine to mature. This care and love that goes into producing this cheese is reflected in Steve’s images - from the land the cows are farmed on to the hand stamped wax casing around the cheese to the great characters who make this possible. He also displays delicious recipes, which work perfectly with the cheese.

'To visit the cheese is awe-inspiring, especially if you glimpse the grey roofs of the caverns, soaring cathedral-like above you. Water flows or drips constantly, ferns grow in unexpected pockets, and the floor, even when cleared, is a hazardous terrain of leftover slate – or, as Merrells puts it, 'like walking over an enormous collection of loose cheeseboards’.'
