The Apéritif used to be the first wine & tapas bar belonging to the biggest restaurant and hotel's group in Kinsale (the Gastronomic Capital in Ireland). As the competence increased very strong in some many other places in the last two years, the Aperitif was empty when they found me. Having a general global study in the place about the whole situation and considering all the factors, focussing in the owner expectation and in their own only resources I created I developed the first Irish Fusion Tapas (with the typical irish food and flavours) & Curious Wine Bar (with the currently wine suppliers). I change the appearance of the local to give it personality converting it in a practical tapas bar with an old theatre atmosphere always considering all the facts that they already got and expending the minimum amount of capital. Wine tasting experiences, meeting business dinner for companies, free spanish lessons, the "wine after the mass" on sunday morning as a meeting point were all different purposes to develop it to the locals, with all the marketing strategies and social media campaigns to boost it, to be unique and to get back even more local customers
