To celebrate Searcys 170th Birthday at London Cocktail Week in association with Willem Barentsz, a bespoke cocktail inspired by Searcys’ pastry provenance was developed. Founded in 1847 by John Searcy, the pastry chef to the Duke of Northumberland, Searcys began as a luxury catering service. In homage to Searcys’ history as connoisseurs of pastry, The ‘Sky High’ cocktail was created and served in a mini cage complete with macaron.
